Instructions
Step 1
Bring a large saucepan of water to the boil.
Step 2
Add the pasta and cook for 2 minutes, or according to the packet instructions.
Step 3
About 30 seconds before the cooking time is up, drop in the cherry tomatoes and let them boil with the pasta.
Step 4
Chuck the spinach into a colander and when the pasta is cooked, tip it into the colander - the heat of the water will cook the spinach.
Step 5
Tip the contents back into the saucepan and mix in the pesto.
Step 6
Season with a little salt and pepper, cover with a lid to keep warm and leave to one side while you cook the tuna.
Step 7
Melt the coconut oil in a frying pan over a high heat and fry the tuna for 1 minute on each side (this will give you a rare piece of fish; if you prefer it medium rare, give it 90 seconds on each side).

Pile up the pasta and top with the sliced cooked tuna and some basil, if using
