Dinner Rolls

Instructions

Step 1
In a large bowl (or stand mixer) add 3c flour and 1tsp salt. Remove 1/4c of the flour for the yeast mixture.
Step 2
Warm 1c milk to about 100-110° in a large measuring cup. Mix in 4T melted butter. Mix in the 1/4c flour and 1/3c sugar. Add in the yeast and mix. Let bloom for 5 minutes.
Step 3
Beat the eggs and mix into the bloomed yeast mixture.
Step 4
Dump the yeast mixture into the flour and mix until it’s all stuck together. Turn dough onto a lightly floured surface and knead for 5-7 minutes *If using stand mixer: Use dough hook. Mix on med-lo speed for about 3-5 minutes or until dough forms a ball and pulls apart from the bowl. Make sure to scrape out any unmixed flour from the bottom of the bowl.*
Step 5
Rub some olive oil or butter all over the dough ball (to prevent sticking) and place in a bowl. Cover with cling wrap and a towel. Set in warm spot to rise for 1 hour.
Step 6
Once risen: Turn the dough ball back out onto a floured surface. Cut into about 12 dinner rolls. Shape and pinch the rolls and tuck seams toward the bottom of each roll. Place in greased 8x11 or 9x13 baking dish. Cover with towels and let rise for another hour. *You can make a day or 2 ahead of time. Once at this stage (in baking dish)… Cover tightly with Saran Wrap and place in refrigerator. Take them out of fridge and let them sit on countertop about 2-3 hours before you want to bake them. They will start rising.*
