Hand blender or process all ingredients until smooth. Heat skillet on medium sprayed with cooking spray or light coat of olive oil. Ladle 2 tablespoons of mixture into pan and spread each into (3) 3-4" round or square flat "cakes" and cook on each side until firm, pressing flat as they firm up. Serve with your favorite filling.
