Step 1
Leave cream cheese out to come to room temp. Peel potatoes and dice evenly. Boil in salted water until tender. While potatoes cook: Sauté 1/2 diced onion or 1 small onion for a minute then add ground beef. If you want, add diced bell pepper. Brown meat and season with seasoned salt lightly. Stir in corn. Drain mixture, take off heat. Stir in can of soup and 1/2 can of milk and garlic powder. Season to taste. Layer meat mixture in ungreased casserole dish. Once the potatoes are tender, drain, then mash lightly. Put 1 stick of butter and in a pan and cook 1/2 finely diced sweet potato boom or 1 small onion. Add a little seasoned salt. Add this mixture to the mashed potatoes along with cream cheese and sour cream to taste (1/2 cup to a cup). Add more seasoned salt if needed. Spread potatoes on top of meat mixture. Put pts of butter on top and bake uncovered for 30 minutes. This will not brown on top. You can broil it if you want to brown it. Also, it could boil over so you might want a pan under the rack to catch any juice. Enjoy. Wear your sweatpants when eating this because you’ll have 3 bowls.
