Instructions
Step 1
peel potatoes, finely dice and cook in salted water
Step 2
clean mushrooms (without water), and quarter
Step 3
peel shallot and finely mince
Step 4
heat oil to medium high in a pan, add shallot and mushrooms. sweat.
Step 5
strain potatoes but reserve 100g of the water
Step 6
add potatoes with the reserved water to the pan and bring to the boil
Step 7
add creme fraîche and yoghurt
Step 8
wash romaine lettuce, shake off excess water and cut in strips
Step 9
turn off the heat and gently add lettuce to the pan
