Ingredients
6 servings
2 cupspotatoes
peeled and cubed
2carrots
peeled and grated
1onion
small, chopped
1clove garlic
minced
6 cupswater
1 tablespoonbeef bouillon granules
½ teaspoonsalt
1 tspparsley
1 tspbasil
1 poundground beef
browned and drained
2 ½ cupsmilk
divided use
3 tablespoonsall-purpose flour
8 ouncesVelveeta
cubed
0.5 poundbacon
crisply cooked and crumbled
Instructions
Step 1
Brown and crumble ground beef. Drain excess grease and set aside.
Step 2
Combine first 9 ingredients in a large saucepan; bring to a boil over medium-high heat. Reduce heat and simmer until potatoes are tender.
Step 3
Stir in beef and 2 cups of milk.
Step 4
In a small bowl, whisk together flour and remaining ½ cup milk until smooth. Gradually whisk into soup.
Step 5
Bring to a boil; cook 2 minutes or until thick and bubbly, stirring constantly (so mixture does not burn.)
Step 6
Reduce heat; add cheese and stir until completely melted. Garnish with bacon and serve.
