Instructions

Step 1
Scrub potatoes well. For soft skins, rub potatoes with shortening. Prick potatoes with a fork. Bake in 425 degree oven for 40 to 60 minutes or until tender. Use a knife to cut a lengthwise slice from the top of each potato; discard skin from slice. Use a spoon to gently scoop out the inside of each potato, leaving 1/2 inch shell. Set potato shells aside. In a bowl, mash the scraped tops and insides of potatoes. Beat in butter, sour cream, and pepper. Stir in the shredded cheese and cooked bacon pieces. Spoon or pipe potato mixture into the potato shells. Place in a shallow baking pan. Top with more shredded cheese if desired. Bake at 425 degrees for 20 to 25 minutes, or until lightly browned and cheese melted.
