Ingredients

1fresh jalapeño
seeded and chopped

1 lbandouille sausage
quartered and sliced

1can lump crab meat
picked through for shells
1 pkgcrawfish tails

1.5 lbwhite american cheese
2 ozparmesan
2 ozromano
8 ozsharp cheddar
8 ozcolby jack cheese

Instructions
Step 1
Heat oil to 350, cut wonton wrappers in half crossways to form triangles
Step 2
When oil is heated, drop wonton wrappers in oil, and using a slotted spoon stir them around until golden brown. Drain on a paper towel.

Preheat Oven to 350
Step 4
Melt butter in large Pot (I always use cast iron)

Add in onion, jalapeño, bell pepper and sauté until soft, around 5 minutes
Step 6
In the meantime cut your sausage in half lengthwise and then half again, then slice like you usually would

When onions are soft, add the sausage and garlic

Sautee again for around 5 minutes.

Add flour and stir, letting the raw flour cook out for 2-3 minutes
Step 10
Add heavy cream and milk to form a béchamel sauce

Cut up white american cheese and add to sauce. Allow to melt into the sauce.
Step 12
Once chips are ready, add shrimp and cook on medium low 2-3 minutes. Then add the crawfish. When cheese is melted and shrimp is cooked fully add the parmesan, Romano, and crab.
Step 13
Season to taste with garlic powder, Old Bay, and Tony’s.

At this point if sauce is too thick, you can add a little milk. Remember that it will be going over chips, though, so you don’t want it too thin.
Step 15
A few minutes before sauce is done, assemble nachos by piling the fried wontons on a sheet pan, and generously sprinkling grated cheddar and colby jack. Bake in the oven for about 5 minutes until cheese is melted.

Generously top with seafood queso and chopped green onions
