Instructions
Step 1
Trim the fins and tail of the fish
Step 2
In a large deep sided frying pan heat 2 tbsp olive oil.
Step 3
Add fish, season with salt and pepper and fry for 5 minutes.
Step 4
Add the garlic and chilli pepper and cook for 1 minute more, then turn the fish over, add cherry tomatoes, water, salt and pepper, cover with the lid and cook for another 10 minutes.
Step 5
Add coriander and cook for 5-10 minutes more.
