Instructions

Step 1
1. Preheat oven to 375 degrees.
Step 2
Adjust the heat of the enchilada sauce to taste by adding some sour cream, chicken broth to reduce heat and/or a little bit of baking soda to reduce acidity.
Step 3
In a 9x9 square baking dish, add a thin layer of sauce. Add layer of tortillas, then half the chicken, half the onion, half the green chiles, half the beans. Add a sauce to barely moisten, the half of the cheeses. Repeat the layering.
Step 4
Bake for 35 to 40 minutes, or until the middle reaches 164 degrees and the top starts to brown and things are bubbly. Let sit for 5 minutes or you'll be sorry to have a burnt mouth.
Step 5
Serve with toppings of choice (sour cream, salsa, chopped cilantro, black olives, pickled jalapenos, chopped tomatoes...?)
Step 6
Notes: adjust cheese amounts to taste. Feel free to use leftover refried beans or black beans instead of pintos.
