Sourdough Bread (Quick)

If you don't have time to process your sourdough overnight this is a solution for same day sourdough! Sometimes I add a little sugar, switch out one of the cups of flour for rolled oats, or 1/2 cup coconut flour (a full cup makes the bread very dense). I might also add a few hands full ofCo nuts, seeds or dried fruit to the flour to mix it up a bit!

Instructions
Step 1
Combine all ingredients and knead to form smooth dough (It will be sticky to the touch)
Step 2
Place in a greased bowl and let rise until double in size.
Step 3
Gently divide dough in 1/2. Gently shape and let rise in flour dusted bannetons or bowls lined with floured tea towel.
Step 4
Cover and let rise for 45minutes - 1 hour.
Step 5
Gently turn risen dough onto greased cookie sheet. Score bread with lame or sharp knife. Spray with water or bake in convection steam oven. 350F for 20-25 minutes.
