Ingredients
6 servings
1 ½ cupschickpea
dried, soaked in water overnight with 1 teaspoon of sodium bicarbonate
3 clovesGarlic
½ cupLemon juice
⅔ cupTahini
1 teaspoonsalt
2Ice cubes

Instructions
Step 1
Wash The chickpeas and drain it, Boil it in a saucepan with a pinch of salt for an hour or when it becomes bloated.
Step 2
Then put the chickpeas while it’s still hot in a food processor, add garlic, lemon juice and pinch of salt, mix it about 5 to 10 minutes.
Step 3
Add the tahini to the food processor and blend until the mixture is thick and creamy.
Step 4
While running the food processor, drop in the ice cubes one by one, then blend until the mixture is super smooth for about 2 minutes until become creamy.
Step 5
Taste and adjust as needed by adding more lemon juice or salt.
Step 6
Spread the Hummus in a serving dish, put a little amount of boiled chickpeas on the center and pour olive oil over it, sprinkle cayenne pepper and garnish with parsley.
Step 7
Serve it cold along a side of salted cucumber pickles, chili pickles, olives and some greens such as mint, green peppers and onions.
