Instructions

Step 1
Soak the chickpeas in lots of cold water over night. Drain.

In a large pot, pour the soaked and drained chickpeas and add a lot of water and the baking soda. Bring to a boil, lower to medium-low heat. Cook for about 2 hours, or until the chickpeas a soft. To test - grab one chickpea and crush between your thumb and finger. If it crushes easily, it’s ready.

Save about 1 cup of the cooking water and drain the rest

Use a food processor to completely mash the chickpeas with half a cup of the cooking water. If the mixture is too thick, add more water. It should have the consistency of plaster.

Add the tahini and mix very well
Step 6
Season with salt and cumin, and add lemon juice to taste.
Step 7
If the consistency is still too thick, add more water - but sparingly! A little goes a long way.
Step 8
Keeps in the fridge for 5-7 days, depending on where you place it inside the fridge (the deeper, the better)
