This is a delicious and warming one-pot meal which can be served alongside cornbread, tortilla chips, or atop mexican rice. Great for a big gathering, this chili can also be easily frozen in individual or large containers for a quick and easy weeknight reheat.

2 Tbspextra virgin olive oil
0.5white onion
medium, diced
1shallot
large, diced
1celery stalk
diced
1carrot
diced
1green bell pepper
large, chopped, optional
1red bell pepper
large, chopped, optional
1 x 8 ozchilies
can
6garlic cloves
crushed
1 lbs94/6 ground beef
8 ozmushrooms
optional, sliced
1 ½ cupsvegetable stock
2 Tbsptomato paste
14 ozcan black beans
14 ozcan white kidney beans
14 ozcan refried beans
1 ½ TbspGround Cumin
3 Tbspground chili powder
1 Tbspmushroom umami seasoning
1 Tbspcoarse salt
2 Tbsplime juice
2 Tbspworcestershire sauce

Instructions
Step 1
Heat oil on medium heat in large dutch oven until shimmering.
Step 2
Add onions, shallot, celery, carrot, bell peppers (if using) and saute until soft, about 7-8 mins.
Step 3
Add garlic and chilies, cook for 1 min.
Step 4
Add ground beef and sear for 3-4 mins until beef is browned.
Step 5
Add tomato paste and cook for 2-3 minutes.
Step 6
Add spices & mushrooms (if using) and cook for 1-2 mins to release some liquid.
Step 7
Deglaze with vegetable stock.
Step 8
Gently fold in black, kidney, and refried beans.
Step 9
Add lime juice and Worcestershire sauce. Simmer chili for 20-25 minutes.
Step 10
Divide between 8 bowls and top with 1 1/2 tsp mexican cheese, 1 tbsp sour cream, and a sprinkle of green onions.
