Instructions

Tandoori Chicken

Step 1
Marinade the chicken for 30 mins
Step 2
Cook on BBQ grill for 8 mins per side until cooked and charred

Let it sit for 10 mins. Cut into medium sized pieces.

For the gravy

Step 4
Roughly chop the tomatoes. Cook tomatoes in a pan with butter, mace, cardamom pods and garlic.
Step 5
Cool the mixture and blend it.
Step 6
In a pan, cook together butter, chopped ginger and slit chillis.
Step 7
Strain the puree into the pan with butter, ginger and chillis. Stir to combine and cook for at least 30 mins to get rid of the tart tomato flavour.
Step 8
Add chilli powder, salt and sugar. Mix well and adjust seasonings as per taste.
Step 9
Add chicken. Finish with cream, cardamom powder and kasoori methi.
