Microwave blueberry muffin

For those mornings when you need all the sweet satisfaction of a blueberry muffin, but don’t have the time to cook up a batch, throw together these store cupboard ingredients and cook in the microwave. The timing is based on a standard 850W microwave. EASY TIP For a warming twist, add a pinch of cinnamon to the batter before cooking. For a summery version, finely grate a little unwaxed lemon zest into the mix.

Instructions

Step 1
1 Mix together the flour and sugar in a large mug, then stir in the blueberries.
Step 2
2 Spoon in the soya milk, sunflower oil and vanilla extract, then mix until smooth.
Step 3
3 Microwave for 1 minute 30 seconds. Allow to cool for 2 minutes before enjoying.
