Ingredients

4sweet potatoes
Medium, peeled and sliced about 1/4 inch thick, You'll need 24 slices, You can make them refined using a cylindrical cutter of leave them rustic
olive oil
Himalayan Pink sea salt
1 tablespoondark brown sugar
½ teaspoonvietnamese cinnamon
4 ozgoat cheese
1 tablespoonheavy whipping cream
1 tablespoonhoney
¼ cupcandied pecans
¼ cupdried cranberries
honey
for drizzling
Instructions
Step 1
Preheat oven to 400 degrees
Step 2
Combine the sugar and cinnamon
Step 3
Brush each side of the sweet potato with olive oil and sprinkle with cinnamon and sugar.
Step 4
Line a large baking sheet with parchment paper and arrange the sweet potatoes on the pan.
Step 5
Bake on one side for 15 minutes the flip them over and bake 15 minutes.
Step 6
Combine goat cheese, cream cheese and honey in a mixer with a whisk attachment. Transfer mixture to a piping bag with a medium star knozzle.
Step 7
When rounds have cooled pipe a dollop of goat cheese onto the center of each and sprinkle with pecans and cranberries. To finish drizzle with honey and serve.
