Tamales de pollo en salsa verde

Tamales are labor-intensive but so worth it! Green chile tamales are just one of the many varieties of tamales consisting of various salsas, meats, veggies, cheeses ect. Here’s how I prepare the chicken and green salsa.

Instructions

For the chicken

Step 1
This recipe calls for two whole chickens. Place chickens onto a sheet pan and roast in oven for 30 minutes. Then place chicken into a large stock pot along with half the onion, 1 head of garlic cut in half, 1 rib of celery, 1 carrot and one bayleaf. Bring to a slow rolling boil and cook for 2-3 hrs until chicken is fork tender easy to pull apart. Once the chicken is done cooking, transfer it to a sheep pan for shredding. Reserve the chicken broth for masa and for the salsa.

For salsa verde

Step 2
Place the peppers, tomatillos, and half an onion and garlic on a baking tray. Broil in the oven turning the veggies over once. *Keep an eye on them. The skin just needs to be blistered. Once the veggies are done roasting, place the peppers in a plastic bag to sweat for a couple of minutes. Place the onion and tomatillos in a blender. Peel the poblanos and remove the stems and seeds. Also remove stems from jalapeños and Serranos leave the seeds this recipe was not spicy at all add more Serranos if you want them spicy. Blanch a bunch of cilantro thick part of stems removed and a bunch small of epazote thick parts of stems removed about 14 grams for about a minute then cool in an ice bath. Add them to the blender with a 1 cup of reserved chicken broth. Purée until smooth. Add the salsa to a large pot or pan and place over medium heat. Allow it to simmer for a few minutes. Add shredded chicken and simmer 5 minutes. Add about a cup chicken stock if it looks a bit dry and season with Salt to Taste, 1 teaspoon pepper and 1/2 to 1 teaspoon cumin powder. Also chop and add carrot, celery rib and bell pepper you added to stock. They should be useable as long as your boiling process ain’t to high. Cover your chicken en salsa verde and set aside to cool.
