PINEAPPLE UPSIDE DOWN CAKE

After melting butter in oven, I add at least 4.7 oz brown sugar, but can sprinkle more in to soak up some of the butter if I want.

To make the sponge 1
Step 3
Cream together 5oz butter or margarine and 5oz sugar until soft and light
Step 4
Whisk the eggs well and beat gradually into the butter mixture.

Sieve the flour or flour and baking powder.
Step 6
Mix the vanilla essence and milk.
Step 7
Fold the flour and milk alternately into the creamed mixture.

For the Topping

Melt 3oz butter in a 7-8 inch cake ţin or oven-proof dish, top with 3oz brown sugar.
Step 10
Arrange a design of pineapple rings, pecan or halved walnuts and Maraschino cherries on the butter and sugar
Step 11
Top with the sponge mixture.
Step 12
Bake in the centre of a very moderate oven, 325-350 F, Gas Mark 3-4 for about 1 hour
Step 13
Turn out, serve hot or cold with cream
