Instructions
Step 1
Heat cream, milk, sugar, and split vanilla beans in a heavy-bottomed saucepan, stirring occasionally until the sugar is dissolved and the mixture is hot (until it begins to steam). If using extract, do not add vanilla until later.
Step 2
While base is heating, place the egg yolks in a bowl and whisk briefly.
Step 3
Temper the eggs. Once the base is hot, remove from heat and drizzle about one cup of the base into the egg yolks, whisking constantly. Then drizzle the egg mix into the base, again whisking constantly.
Step 4
Continue heating on medium heat, stirring constantly with a wooden spoon, until mixture thickens slightly, about 170°F.
Step 5
Remove from heat. Scrape vanilla seeds from beans and pour the custard through a fine mesh strainer into a metal bowl set in an ice bath. Allow custard to cool, then churn for about 30 minutes.
