Instructions
Step 1
Season chicken with Tony’s, garlic and herb seasoning and onion powder.
Step 2
Start sugar roux, combine oil and sugar and stir until it’s a rich brown color (like coke). Don’t let it burn. If it starts to smokes it’s burning.
Step 3
Add seasoned chicken to your sugar roux and brown on both sides. Once brown pull it out and add onion, bell pepper and celery.
Step 4
Once veggies are soft, throw in the garlic and cook for a minute or two.
Step 5
When all veggies are cooked, add your chicken back in along with 5 cups of water or low sodium chicken stock. If using water, add 1 Tbsp of better than bullion chicken base.
Step 6
Season again and add dried parsley. Let the water cook down on a medium heat. As it cools down the gravy will thicken. The longer it cooks the better it will taste.
