Instructions
Step 1
Brown your ground beef over medium, breaking it up as you go and remove to drain. Drain the fat from your pot and crisp up the pancetta. Keep the pancetta in the pot and add the veggies, sprinkle on some salt, and cook until soft, around 8 minutes.
Step 2
Return the ground beef to the pot and add the red wine. Reduce heat and cook until wine has mostly evaporated.
Step 3
Add tomato paste, bay leaf, Italian seasoning, and cook for around 5 minutes.
Step 4
Add stock and milk to the pot along with a pinch of salt. Cook on very low heat for 2.5 hours, stirring regularly.
Step 5
Cook 16 oz of pasta in salted water to al dente. Drain, saving 1 cup of pasta water. Increase heat in meat mixture and add the pasta water and 1/2 cup of Parmesan. Mix well and then toss in pasta.
