Instructions

Step 1
Boil a full kettle. Slice the garlic (don’t chop).
Step 2
Heat a large pan with olive oil over medium high heat. Once hot, add the beef mince and break it up with a wooden spoon.
Step 3
While the beef is browning, roughly dice the tomato. Once the beef has browned add the tomato and the sliced garlic to the pan.
Step 4
Meanwhile add the tortellini to and the boiled water to a pot with a little bit of salt. Cook for 3-4min and then strain, reserving 1 cup of pasta water.
Step 5
Add the oregano, basil, and flour to the beef and mix well. Add the tomato paste, soy sauce, stock pot, and the starchy pasta water to the beef and contain cooking for 2-3 mins or until it thickens.
Step 6
Once it thickens add the tortellini to the beef and mix everything together. If it looks too dry, add more pasta water.
Step 7
Serve with a topping of Parmesan cheese and a few grinds of black pepper.
