Ingredients

3 cupscremini mushrooms
sliced
1 cuponions
sliced
4cloves garlic
minced
2 cupsvegetable broth
2 cupsunsweetened oat milk
12 ozwhole wheat orzo pasta
dry
1 x 15 ozcan navy beans
drained and rinsed
10 ozbaby spinach
4 tspapple cider vinegar
½ tspdry thyme
½ tsplemon zest
sea salt
to taste
fresh ground black pepper
to taste
Instructions
Step 1
In a large pot, cook mushrooms, onion and garlic over medium heat until soft and reduced, adding water by the tablespoon if necessary to prevent sticking.
Step 2
Add vegetable broth, milk and orzo. Increase heat to high, cover and bring to a boil.
Step 3
Reduce heat to medium-low and simmer until orzo is tender (about 5-7 minutes).
Step 4
Stir in beans to warm and gradually add spinach until it has wilted.
Step 5
Add vinegar, thyme and lemon zest. Season with salt and pepper as desired.
