Ingredients
8 servings
1 poundshell pasta
whole wheat if you can find it
1 tablespoonflour
1 tablespoonbutter
1 ½ cupsmilk
1 poundcheddar cheese
you could get fancy with different types of cheese here
½ cuppumpkin
canned, unsweetened
2 tablespoonspumpkin spice blend
or any combination of cinnamon, nutmeg, clove, allspice and ginger
8 cupsmixed greens
Olive oil
balsamic vinegar
salt
pepper
Fresh sage
al
basil

Instructions
Step 1
Grate your cheddar cheese and set aside.
Step 2
Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and set aside.
Step 3
Heat another large sauce pot to medium heat and melt butter. Once melted, add flour and whisk together until clumpy. Add 1/2 the milk and whisk until milk thickens. Add remaining milk and whisk again until thickened.
Step 4
Whisk pumpkin and spices into milk mixture.
Step 5
Add cheese to pumpkin mixture and whisk until melted and smooth.
Step 6
Add pasta to cheese sauce and mix thoroughly.
Step 7
Prepare side salads by drizzling olive oil and vinegar over mixed greens. Serve on the side of mac and cheese and enjoy!
