Instructions

Step 1
Discard the Jackfruits liquid
Step 2
Cut the Jackfruits into slices then add into a large bowl
Step 3
Discard the Longan then add to the same bowl as the cut Jackfruits
Step 4
Add Coconut Gel & Toddy Palms including the syrup
Step 5
Drain the water chestnuts liquid from the can
Step 6
Cut the water chestnuts into little chunks
Step 7
If making two different colors then split it up evenly into 2 separate bowls
Step 8
Add a few drops of food coloring then stir with a spoon to completely cover the water chestnuts with the food coloring

Add Tapioca Starch to each bowl, stir to coat evenly
Step 10
Continue adding until you get a good thick coating of it

Bring a pot of water to a boil
Step 12
In a separate large bowl, add ice and water, set aside
Step 13
Add the coated water chestnuts to a strainer, shake to remove any excess Tapioca Starch

Add to the boiling water slowly to avoid it clumping up
Step 15
Stir then continue cooking until it floats
Step 16
Drain then add to the ice water bowl
Step 17
Add the cooked water chestnuts to the bowl of fruits
Step 18
Add Half & Half to your desire creaminess

Scoop the Chè Thái into a bowl or glass and enjoy!
