Ingredients

1.5 lbsboneless chicken breasts
thighs or a mix
1 x 14.5 ozcan diced tomatoes
1 cupchicken stock
divided, plus more if needed
2 Tbspchili powder
2 tspsalt
1 tspcumin
1 x 15 ozcan black beans
drained & rinsed
1 cupfrozen corn

Instructions
Step 1
Combine chicken, diced tomatoes. 1/2 cup chicken stock, chili powder, salt, and cumin in slow cooker. Make sure the chicken is covered, and add additional stock if needed. Cover and cook on low 6-8 hours.
Step 2
Add black beans and corn and cook additional 30 minutes or until warmed through.
Step 3
Remove chicken from slow cooker and shred into bite size pieces. Stir back into burrito mixer.
Step 4
Serve bowls with selected toppings.
Step 5
Will keep for one week in the refrigerator, or 3 weeks in the freezer.
