Instructions
Step 1
Preheat oven to 180’C fan. Tip couscous and stock into roasting tin. Toss the halloumi, chickpeas and red onion with olive oil and paprika and scatter all over the couscous.
Step 2
Put tin in the oven and bake for 25-30 mins until halloumi is golden brown and couscous is cooked through.
Step 3
Mix 1 tablespoon olive oil and lemon juice through the spinach and coriander. Sprinkle on top of the bake when ready to serve.
