Spaghettini with Lemon and Ricotta

Instructions

Step 1
Bring a large pot of salted water To boil over high heat. Add the spaghettini and cook, stirring occasionally, for about six minutes, or until it is tender but still firm to the bite. Drain the spaghettini, reserving about half cup of the cooking water.
Step 2
Meanwhile, in a large bowl, mix the ricotta, oil, and pepper. Great the zest of one lemon over the ricotta and mix it in. Season with salt.
Step 3
Add the spaghettini to the ricotta mixture and stir well to quote. Add the reserved cooking water to moisten as needed. Season to taste with salt.
Step 4
Divide the pasta among four plates. Finally great zest of the remaining Lemon over the pasta and serve immediately.
