Instructions
Step 1
Cook you spaghetti as packet instruction
Step 2
Dice pancetta and cook in a frying pan on a high heat until cooked and slightly crisp
Step 3
Beat the the egg yolks together in a bowl and add most of the Parmesan
Step 4
Once the pasta has cooked add it to the pancetta pan turning down to the lowest heat. Keep the pasta water
Step 5
Add in the egg cheese mix with a ladle of the pasta water. Keep stirring until you have a smooth creamy sauce coating the spaghetti
Step 6
Add pepper to taste and serve with the remaining Parmesan on top
