Cheesy baked potatoes (McAlister's spud copycat)

Instructions

Step 1
Wash potatoes. Poke holes in the potatoes with a fork and place on a microwave-safe plate. Cover potatoes with a wet paper towel. Microwave until soft (6-10 min depending on potato size).
Step 2
Cook chicken however you wish. Grilled or pan cooked is preferred.
Step 3
Microwave frozen broccoli according to instructions.
Step 4
Saute bell pepper until soft, about 5 minutes. Add in spinach for the last minute or two.
Step 5
In a saucepan, add the Velveeta and can of Rotel. Heat on low until Velveeta has melted. Stir regularly.

Assembly

Step 6
Cut potato lengthwise and squeeze ends to open.
Step 7
Add butter and salt if desired
Step 8
Add chicken, veggies and top with cheese sauce. Add sour cream if desired.
