Pork Chops with Fig Sauce, Zucchini, Purple Sweet Potato Mash

Instructions

Step 1
Wash and dry all produce. Peel yams/purple sweet potatoes and chop into 1/2 inch pieces.
Step 2
Place sweet potatoes in medium pot, then cover with enough water to cover by 2 inches. Add salt, cover, and bring to a boil for 15-20 minutes, until tender. Drain and return to pot.
Step 3
Mash with 2 tablespoons butter, salt, pepper, and a very tiny dash of cinnamon to-taste.
Step 4
Meanwhile, pat pork dry, season all over with salt and pepper. Add a drizzle of oil in a large pan, and cook pork chops. If they need more time internally, cook on a tray in the toaster oven until 145 degrees.
Step 5
In the same pan, saute zucchini and spinach with fresh rosemary.
Step 6
In the same pan, heat a drizzle of olive oil. Add onion and remaining rosemary. Cook for 2 minutes.
Step 7
Stir in 1/4 cup water, fig jam, and 5 teaspoons balsamic vinegar, and cook for 3 minutes until thickened. Remove pan from heat and stir in 1 tablespoon butter, salt, and pepper.
