Instructions

Step 1
Mix the butter, sugar and flour to form a dough. Press this into a greased 23cm-square cake tin and bake at 190°C/Gas 5 for 20 minutes. Leave to cool.
Step 2
Meanwhile, make the topping. Pour the milk into a heavy-bottomed pan and add the butter and sugar. Bring to the boil and then boil gently for 5 minutes, stirring continuously so the mixture doesn't stick. Pour the topping over the shortbread and place in the fridge to set.
Step 3
Once the topping has set, melt the chocolate in a bowl over a pan of simmering water and pour it over the topping. Leave to set again and cut into squares.
