Instructions

Step 1
Preheat oven to 140C
Step 2
For the meringue beat together egg whites and pinch of salt until foamy, then start adding caster sugar a bit at a time. Whisk until stiff peaks. Sift in the cornstarch and mix carefully, using a spatula.
Step 3
Spread the meringue evenly onto the baking tray, lined with parchment. Sprinkle with almond flakes on top and bake for approximately 1 hour, or until firm to the touch.

Meanwhile, prepare the berry filling. Pass the thawed berries through the sieve. In a small bowl mix sugar and cornstarch and add to the berries. Start to heat on medium-low heat stirring constantly. Once thickened, remove it from the heat and let it cool.
Step 5
When the meringue is ready, take it out from the oven and turn it upside down on another baking paper. Remove the baking paper from the bottom of the meringue and let it cool.
Step 6
For the cream cheese filling whisk together cream cheese, icing sugar and double cream until firm.
Step 7
Spread the cream cheese on top of the meringue, then spread the berry filling and roll it up, starting with one of the narrowest edges.
Step 8
For the decoration whisk together cream cheese, icing sugar and double cream until firm. Decorate the meringue roulade with cream cheese and berries and enjoy!
