Instructions

Step 1
Fry bacon - 3 strips half way, 2 strips fully cooked. Chop 3 half cooked strips and toss them into the soup pan. The fully cooked strips are to be crumbled and used as a topping.
Step 2
In a soup pan with bacon, add green onion whites and corn. Sauté for 5 min.
Step 3
Add shrimp and sauté for 2 min.
Step 4
Add chicken stock, cream, parsley, seasoning to taste. Simmer for 10 min.
Step 5
Blend 1/3 of the soup (or more, depending on the texture you prefer) and return to the soup pan. Reheat but don’t boil.
Step 6
Serve topped with bacon bits and green onion
