Omg must I say this was SO GOOD. It was giving Indian curry chicken but add ✨tomato ✨
Why have I slept on Indian food for this long? 🫠 Although this looks like a complicated dish it’s pretty easy to make! & you probably have almost all of these ingredient in your home. I know most people choose to blend the tomato sauce together with the onions, however I did not. I liked the extra flavor it provided without blending. This recipe is not the authentic version but I tried my best and tweaked it to my own liking. I LOVE spicy so I made sure to throw in extra spices!
(& I cheated and brought some naan bread)

Butter chicken Marinade
1.25 lbschicken thighs
2 Tbspgaram masala
1 Tbspcumin
1 Tbspcayenne pepper
1 Tbspturmeric
1 tspsalt
2 TspSeasoning
FOR EXTRA SPICINESS
½ cupplain yogurt
1 Tbspbutter
Sauce
0.5Yellow Onion
Diced
3 Tbspolive oil
2 Tbspwater
2 Tbspbutter
½ cupdiced tomatoes
1 cupheavy cream
1 Tbspminced ginger
1 Tbspminced garlic
2 Tbspsugar
Garnish
Instructions
Step 1
Cut chicken thighs into bite size pieces and season with all seasons in the ingredients Garam Masala, Cumin, Cayenne Pepper, Turmeric, Salt, Slap Ya Mama(Optional), and then add yogurt.
Step 2
Mix well unto you get a orange like color and cover the meat with plastic wrap and let it marinate for as long as you can. I marinated for 24 hrs but at least marinade for a hour.
Step 3
Add chicken to pan with butter, on high heat, do not overcrowd chicken. Cook for about 7 mins on each side or until you get a nice brown sear. Remove the chicken and add in olive oil.
Step 4
To the pan add in diced yellow onions and water to deglaze and caramelize the onions. Let Onions cook for about 5-6 mins or until caramelized. Turn heat on medium to low and add in crushed tomatoes, heavy cream, butter, sugar, minced garlic, minced ginger, and the same seasonings as the marinade.
Step 5
Let Sauce simmer for about 3-5 minutes. Add your chicken to the sauce toss it to get it thoroughly coted and let it simmer again for about 2 minutes.
Step 6
Serve over basmati rice, garnish sauce with cilantro, and enjoy it with a side of naan bread ENJOY!
