Instructions

Step 1
Warm the milk in a large pot on low. MAKE SURE IT DOES NOT BOIL
Step 2
Whisk together egg yolks and granulated sugar in a mixing bowl until pale
Step 3
After the milk has been warmed up, ladle milk into the egg mixture slowly while whisking to temper the eggs
Step 4
After 2-3 ladles, pour the mixture into the large pot
Step 5
Add vanilla extract (and optionally alcohol here) and cook on low for 10-15 minutes until desired thickness. Make sure to stir often!
Step 6
After time is up, pour through a strainer into another bowl
Step 7
Place the bowl into an ice bath and add spices and heavy cream
Step 8
Continue to stir in the ice bath until mixture has cooled a bit
Step 9
Place into a refrigerator safe container and let it cool completely
Step 10
Enjoy with some extra grated nutmeg on top!
