Instructions
Step 1
Line a 24 cm cake pan with a baking sheet.
Step 2
Let the gelatin sheets soak in cold water.
Step 3
Crumble the cookies until fine and melt the butter.
Step 4
Mix the cookies and the butter and distribute the mix over the cake pan. Press down firmly with the back of a spoon.
Step 5
Puree 1,5 mango and mix with the quark and vanilla sugar.
Step 6
Melt 10 gelatin leaves in a small sauce pan and add to the quark mix.
Step 7
Pour the quark mix into the cake pan and leave in the fridge for 2 hours to stiffen.
Step 8
For the topping, Puree the leftover mango half and add to a small saucepan with the passion fruit and the other 2 gelatin leaves. On low heat, stir until the gelatin is dissolved.
Step 9
Pour the topping evenly on the quark layer and let it set in the fridge for at least 1 hour.
