One pot creamy tomato and sausage pasta

Ingredients
6 servings
½ Tbspolive oil
400gseasoned pork sausage meat
1onion
finely chopped
250gwhite mushrooms
roughly chopped
2garlic cloves
crushed
2 x 400gchopped tomatoes with herbs
tin
1chicken stock cube
500mlwater
just boiled for stock
2 Tbsptomato purée
Crushed chillies
300gpenne pasta
250gfrozen whole leaf spinach
3 Tbsp50% less fat crème fraîche
75ghard cheese
grated
Instructions
Step 1
1. Heat the oil in a large wide saucepan over medium-high heat. Once hot add the sausage meat and cook, breaking up with a wooden spoon, for 4-5 mins until golden brown.

2. Add the onion and mushrooms and cook for a further 3-4 mins until golden and softened.
Step 3
3. Add the garlic and cook, stirring, for a further minute. Add chopped tomatoes, chicken stock, tomato purée, crushed chillies (if using), penne and spinach. Season and stir everything together well. Cover with a lid then bring to a boil, reduce the heat to low and cook, stirring occasionally, for 10-12 mins until the pasta is cooked to your liking.

4. Once cooked, remove from the heat and stir through the crème fraîche. Taste and adjust seasoning, if you like. Divide between dishes and top with grated cheese before serving.
