Ingredients

6chicken thighs
or legs
2bay leaves
½ cupolive oil
1onion
minced
2garlic cloves
minced
0.5 poundlinguica
cut into half round slices or cubes
3tomatoes
medium, peeled, seeded and cut into quarters
3 Tbstomato paste
½ cupwhite wine
2carrots
peeled and diced
6potatoes
sliced and diced into 1 inch pieces
1.5 lbfrozen peas
5 cupswater
enough to cover
hot sauce
optional
salt
to taste
pepper
to taste
Instructions
Step 1
Ahead of time, remove the skin from the chicken. Season the chicken with salt and pepper to taste. Allow to sit for at least 30 minutes.
Step 2
Heat the olive oil in a large stock pot. Add the chicken and fry until the outside begins to turn a slightly golden color.
Step 3
Add the onion, garlic, linguica and bay leaves. Move the ingredients around with a wooden spoon so that these ingredients can sauté at the bottom of the pan. Sauté until the onions become translucent. Add the wine and two cups of water. Bring to a boil. Add the tomatoes, tomato paste and carrots. Allow to cook for approximately 15 minutes or until the tomatoes are softened.
Step 4
Next add the potatoes and frozen peas. Cover completely with water (approximately an additional 3 cups of water). Bring to a boil again and reduce heat to medium. If you so desire, add a dash of hot sauce. Allow to cook for for approximately 20 minutes covered, stirring occasionally to make sure it is not sticking. Remove cover, reduce heat and cook for another 15-20 minutes or until sauce to thickens and all ingredients are fully cooked. You may also add the cover on partially if the peas look like they need to cook a little more. It is important to allow to cook this dish uncovered towards the end so the sauce can thicken. This is when all of the delicious flavors are released.
