Instructions

Step 1
Cut your tomatoes into wedges, or halve if using cherry tomatoes. Cut the plums into 6-8 segments each.
Step 2
Crush the garlic and thinly slice the red onion.
Step 3
In a large bowl, stir together the vinegar, salt and sugar. Mix in the tomatoes, plums, garlic and onion. Set aside for 20-30 minutes to marinate.
Step 4
Roughly chop the cilantro.
Step 5
When the tomato and plum mixture has marinated for 20-30 minutes, toss in the chopped cilantro and olive oil. Serve straight away.
