I made this up when I had extra taco meat/bean mixture. this would be best for a maintenance dinner.

Instructions
Step 1
Wash potatoes and rub with oil and salt. Stab with fork to vent. Bake at 350 degrees F until tender, about 90 minutes.

Use leftover taco meat or beans, or cook meat and mix with taco seasoning.

Step 3
Serve with 2 oz. meat or 3 oz. Beans, .5 oz. cheese, .5oz sour cream, chives and salt and pepper.
