I think this would taste better with boneless chicken thighs but all in all we liked it. The real star of this is the sauce, of which I wish we made double. I actually copied the sauce recipe for a tofu dish last night and really liked it! I used all the same ingredients but just heated and thickened in a little saucepan all by itself. I rarely have fresh ginger so I just sprinkled some ground dry ginger in.
