We used fresh shrimp, scallops, and imitation crab chunks and imitation lobster chunks for the seafood variety.
I also added some cubed red skinned potatoes when the onions were cooking in the butter. I added the garlic after about 8 minutes and let that cook with the onions and potatoes for another 2 minutes.
Then proceeded with the steps about adding flour, old bay seasoning, for my Cajun I used (Cayenne, smoked paprika, chili powder and ground black pepper).
1 cup serving was enough for me vs the 2 cups serving size suggested in the recipe.
This is delicious, flavorful and great on a coldish day.
