So delicious and filling. I'm sure the leftovers will be even better! 2/3rds of the way through the simmer, the stock had disappeared - thankfully I caught it before it burnt and the bottom just got kind of crispy (which I love). Added about 1 1/4 more cups of water and it was all good! Added a bit extra of the maple syrup to the tahini sauce as it was still a bit bitter after I blended, but I think I used a bit too much dill! The extra sweetness balanced it out. Also Added red pepper flakes because I needed a bit more spice.
