Seriously the holy grail of thai curry recipes! I have messed up thai curry so many times, but this one is solid!
Secret key:
1. Use Maesri Red Curry Paste. For me this is THE ONLY pre-made curry paste worth using.
2. A splash of thai fish sauce gives it that iconic Thai Food FUNK, and yes, you want that.
3. The brown sugar is not optional. Even if you just use 1 tablespoon, it is gonna be a game changer (bonus points if you've got palm sugar, but brown sugar works)
