I added hot rotels instead of plain diced tomatoes, some Dano’s seasoning and Cajun seasoning to the other seasonings and this was great! Plenty for 2-4 people for dinner, plus you can freeze in individual bowls for a quick heat and eat meal when you don’t have time to cook! When served, I also topped my bowl with fat free mozzarella and a few spoons of plain fat free Greek yogurt to sub sour cream because I could not find fat free sour cream and this was delicious and creamy and kicked the spice level down a bit as well!
