Delicious! Used mostly as inspiration—don’t follow the recipe exactly.
Alterations:
* for the buffalo sauce used hummus and ghee instead of vegan butter. Also used tons more red hot (like half a bottle)
* cheese sauce: lso added tons more nutritional yeast and Greek yoghurt as that’s what u had (next time use a bit less yoghurt)
Served with a side salad. Also added extra lettuce and tomatoes inside the quesadilla for added freshness.
Next time: would add some raw red onion for more of a bite, maybe even pickled red onion. Might go for the extra red hot sauce next time
