Edit: for dairy free version I want to try to just cook it in a couple cups of chicken broth and add the coconut milk towards the end with the spinach just to heat it up since it ends up separating or curdling if left in the whole time.
No need to dirty a pan, just put oil and garlic in the crockpot first on high heat for 5-10 minutes, then add the chicken, seasonings, sun dried tomatoes, chicken broth, nutritional yeast, and stir.
