after I made the meat, I set it aside then I sauted finely chopped onions in in the same pan. after a few min used some cooking wine to softened them a little more and add some extra flavor. to that I added the butter and flour. I used some heavy cream as well instead of just milk for a richer flavor, then seasoned the cheese sauce as well b4 mixing it all together. skipped the baking dish since it seemed like a wasted step considering it doesn't get baked. although topping it with extra cheese and placing it under a broiler wouldn't be a bad idea.
